Artisan-made by London pasta supremos, Pastifichio Carleschi, who produce and dry their pastas at low temperatures to retain the vitamins. Made with spelt, a hulled wheat which has less gluten than bread and a rich nutty flavour which can be traced back to 6000BC; it is high in carbohydrates and dietary fibre and particularly rich in iron, magnesium, phosphorous, zinc and niacin (vitamin B3), as well as micronutrients, such as calcium and vitamin E.
