Beetroot Nutrition

Beetroots are low in calories and rich in fiber, folate (vitamin B9), manganese, potassium, iron, vitamin C and antioxidants.  Although they have the highest sugar level of any vegetable, their glycaemic index score is medium (61 or 64, depending on who you ask) and their glycaemic load is around 5, which means they can be safely consumed by diabetics.

Courgette Nutrition

Courgettes are rich in vitamins, minerals and antioxidants. They’re a good source of vitamin A, vitamin C, vitamin K, vitamin B6, potassium, carotenoids, magnesium and manganese.  They also contain small amounts of zinc, iron and calcium.
They’re also rich in fibre and water, so contribute to healthy digestion.

Kale nutrition

Kale is one of the most nutritionally dense foods around. It’s low in calories and contains large amounts of vitamin A, C and K with good amounts of vitamin B6 and smaller amounts of vitamins B1, B2 and B3.
